One of my New Year resolutions is for my family to live more simply, more frugally, and more abundantly! Starting with homemade mixes. Yes, you can make your own mix ~~ modify the sugar content, eliminate the sugar (or replace with Stevia), and change up the flours with all or partial whole grain flours.

I tried a Buttermilk Waffle and Pancake Mix. In particular, the waffles are completely wonderful AND I individually froze them on a cookie sheet, stacked in a zip lock bag and we have our own frozen waffles for the toaster. It really worked too! Crispy outside and tender inside.
Here is the mix recipe:
Buttermilk Pancake & Waffle Mix
2 cups dry buttermilk powder
8 cups all-purpose flour
1/2 cup sugar
8 teaspoons baking powder
4 teaspoons baking soda
2 teaspoons
In a large bowl, combine all ingredients. Stir with a wire whisk until evenly distributed. Pour into a 12 cup container with a tight fitting lid (I used a 1 gallon zip lock bag). Store in a cool, dry place. Use within 6 months. Makes about 10-1/2 cups.
When ready to use:
2.5 cups mix
2 cups water
3 eggs, separated
1/4 cup canola oil
Preheat waffle baker. In a large bowl, combine waffle mix, water, egg yolks and oil. Beat with a wire whisk until just blended. In medium bowl, beat egg whites until stiff. Fold into eff-yolk mixture. Bake according to waffle-baker instructions. Makes approx. 12 waffles. Enjoy!
Note: I did not separate the eggs but just put them into the batter whole.

Great idea, Judy! I’ve never made my own waffle mix, because I have a simple recipe I really like to just whip up the night before, but I have made mixes for things like cornbread and muffins before, and it was such a timesaver!

I actually thought of you
because the ability to adjust the types of flour and sugar. Next time going to go with 1/3 wheat flour (give the taste buds time to adjust) and stevia! Our son really loves the ease of grabbing frozen waffles — and I think they are disgusting! So very excited about this discovery. Hope you had a great holiday!
